【原创】 简单易做的豆瓣茄子 [18P]

材料:茄子一个半 (我之前用了半个, 所以剩下的另半个就一起煮了),大蒜5瓣

2.准备一汤匙的豆瓣酱.(以茄子的分量及个人喜好而定)

3.将豆瓣及大蒜切碎. (我们马来西亚人称为蒜米)

4.茄子切大约5cm 长 x 1cm 宽, 然后把它泡在盐水里. (这动作是边切边放进盐水, 原因是不要让茄子氧化而变黑)

6.可以开始了. 热锅, 加入大约两汤匙的食油. (烧茄子的油要比烧菜的油多一些, 没记错是茄子会吸油, 而且烧出的茄子口感比较美味)

11. 当炒到茄子及调料感觉都均匀时, 加入250ml的水, 再翻炒一下.

12.把锅盖盖上, 让它在里面焖一焖 (焖一焖比较快熟, 以中火焖).

大约5分钟再把它翻炒以免干水及让茄子更均匀的熟. 个人觉得茄子一定要软才够爽口. 所以, 再加水, 翻炒至茄子熟软为此.h/y*Pn B!_2K'Q W
